Easy Tuna Pasta Salad
This classic tuna pasta salad is so tasty and keeps really well in the fridge, perfect for batch cooked lunches.

INGREDIENTS
300 g farfalle
2 x 145g tins tuna in spring water, drained
1 x 195g tin sweetcorn, drained
1 red pepper, finely diced
3 spring onions, finely sliced
1/2 cucumber, seeds removed and finely diced
2 tbsp. capers, rinsed
4 tbsp. mayonnaise
3 tbsp. red wine vinegar

DIRECTIONS
Bring a large pan of water to the boil for the pasta and cook to pack instructions. Once cooked, drain then run under cold water until the pasta is cold then add to a large bowl. Add all the remaining ingredients to the bowl with the pasta. Season and mix together until everything is really well combined before serving. This pasta salad will keep well in the fridge for up to 2 days.
