
Easy Lamb Kofta Recipe
Lamb Koftas are SUCH a great dinner choice - easy to make, super healthy, and
just delicious. In this recipe, we actually use a mixture of minced lamb and
beef for optimum flavour, but you can stick to just lamb if you want (just up
the quantity).
We've served ours with a homemade tahini dressing, pomegranate and flatbreads,
but you can opt for pitta bread, couscous, or even a Greek salad. Whatever you
fancy!

INGREDIENTS
400 g minced lamb
250 g minced beef
1 medium onion, finely diced
2 garlic cloves, crushed
1 red chilli, deseeded and finely chopped
50 g coriander, finely chopped
20 mint leaves, finely chopped
20 g pine nuts, chopped
10 g white sesame seeds
1 1/2 tsp. ground cumin
1 1/2 tsp. ground cinnamon
1 1/2 tsp. ground allspice
1 1/2 tsp. smoked paprika
1 1/2 tsp. sea salt
1 tsp. ground black pepper
FOR THE TAHINI DRESSING
3 spring onions, roughly chopped
4 tbsp. light soy sauce
3 tbsp. water
3 tbsp. tahini paste
Juice 1 lime
1 1/2 tbsp. red wine vinegar
4 tbsp. maple syrup
2 tbsp. ginger, peeled and freshly grated
1/2 tsp. red chilli flakes
DIRECTIONS
Place the minced lamb and beef in a bowl together with all the other ingredients
required for the koftas. Mix together well using your hands (Remember to wash
them well afterwards).
Take a golf ball sized amount of mixture and form this into a torpedo shape
making sure they are compressed well.
Place on a plate, covered, and chill in the fridge for a minimum of 30 minutes
to allow them to set their shape.
Meanwhile, make the dressing. Wash the spring onions and roughly chop both bulb
and stalk Add all the dressing ingredients to a blender and blitz until smooth.
Leave to one side.
Heat 2 tbsp of sunflower oil in a large frying pan and fry off the koftas over a
medium heat. Do this in batches and turn so each kofta is browned on all sides
and cooked to your liking. We recommend 3-4min each side.
Serve the koftas straight away with the tahini dressing and flatbreads.
